Overview

Plant-based feeding. Responsible kitchen without waste. Tom Hunt addresses in this book a crucial question today: "What is a sustainable diet?" And it presents a manifesto that will help us understand the answer and also achieve this goal, while providing practical information and inspiring recipes for everyday cooking that take into account how we grow and raise, trade, eat and dispose of food. The manifesto, entitled "From Root to Fruit", shows us how we can sustain a delicious, biodiverse and regenerative food system and provides us with the skills and knowledge to buy, eat and cook in a sustainable way, in addition to eating healthier and with better flavor. Tom's recipes are vibrant and festive, yet simple, nutritious, and affordable. Our food system has the greatest impact on our planet from seed to plate: it affects the health of the soil, biodiversity and entire ecosystems. By changing the way we eat at the individual level, we can help the environment prosper.
